FOOD is OIL turned inside out. Each food will bring certain types of oil into your body. Too much of a certain type of oil will harm you which is a fact of life. It's best to get familiar with the unsaturated fatty oils, meaning not full of single bonded carbon chains. Where saturated (full of) fatty acid oils are full of single bonded carbon chains only which allows the bonds to be very strong, and therefore will be solid in cold temperatures which is why it is hard for the body to break down these oils and clear them from the blood stream. Saturated fatty acid oils are what our cell membranes are mostly made of, but we need unsaturated fatty oils in order to weaken and break down or THIN the strongly single bonded saturated oils which are very acidic and inflame our tissues if too high in concentration in our diet. Unsaturated fatty acid oils contain double bonds which pry apart the strong single bonded fatty acid oils. In order to clear the bloodstream from high saturated fatty acid oils, these oils must be broken down as the body has mechanisms with the pancreas, gallbladder, stomach, and intestine to help this process, but it isn't the only process. This is where the unsaturated oils must be consumed to complete the process of breaking down these fatty acids in your bloodstream as acid inflames our body if it isn't broken down. The cartoon Popeye the Sailor Man was a nutrition lesson early on where Popeye got his strength from spinach and its iron, but who always broke up the fight between the meaty muscle bound Bluto and the spinach iron man Popeye, and in fact kept Popeye going? Her name "OLIVE OyL" as she would start and finish the fight! Olive oil is an oil with high concentrations of unsaturated fatty acid oils.  Restaurants have the olive oil at the salad bar for us to use to help digest the saturated fatty acids you bought from them as they want you to return again!  This oil mixes with saturated oils in our body which pry's apart the strongly bonded carbons in the saturated fats and doesn't allow mega bonding to occur in the blood stream with the saturated fats to carbohydrates and proteins where these megamolecules are too large to get into cells which causes the blood stream to become backed up with too many molecules, leading to high blood pressure, high blood sugar (diabetes), High cholesterol, etc...; thereby, allowing the body to metabolize the oils and break the oil down into individual molecules in order to clear the bloodstream. Saturated oils are too tightly bonded and without thinning oils the saturated fats will build up in the bloodstream which makes the blood acidic and inflames our tissues, muscles, stomach lining, nerves, etc..., as well as deposits in our blood vessel walls as plaques leading to clogged artery syndrome which is the number one cause of death in the USA, and be it sure the pharmaceutical industry and physicians are ready to cash in in order to help you live with these problems. If you are lacking the proper concentration of unsaturated fatty oils in your diet, simply do a search for what foods contain unsaturated fats and improve your diet, you'll be glad you did!

Many people are thinking the certain types of sugar are the demon since it causes the liver to pump out high levels of triglycerides which can lead to the development of atheroslerosis or clogging and hardening of the artery. Yes certain types of sugar are the demon when you don't consume higher levels of unsaturated fatty oils to saturated oils as the unsaturated oils help break up the oils, sugars, and proteins and the cells remove it efficiently from the blood stream before the liver gets it and produces unhealthy levels of triglycerides which is where the fat starts pouring on the belly, pelvis, and arms.

There are other vital habits with eating that include taking on soluble and insoluble fiber (search soluble and insoluble sources online). Soluble fiber produces a gel like substance which blocks the absorption of saturated fat and sugars from food which is why with low fiber intake type foods (fast food) people gain weight fast, develop high blood pressure, and diabetes.  Also insoluble fiber allows the intestine to have proper levels of good bacteria which produce vital vitamins and nutrients we can't get from food sources that also help break down the above mentioned harmful oils, sugars, and proteins, as well as provide critical levels of nitric oxide to the blood vessels which allows the vessels to dilate and relax in order to allow the heart to easily pump blood especially while sleeping. Where without proper levels of nitric oxide, the heart has to pump harder in order to push the blood through the constricted blood vessels which causes the heart to enlarge over time and then ultimately at high risk of a heart attack. The FOOD industry is a multi trillion dollar industry and they want it to stay that way; therefore, if proper nutrition information was taught early on many more would make better choices which would lead to less profits for the food industry and everyone involved all the way from the pharmaceutical industry, cancer healthcare/hospital, health insurance industry, big Agriculture to Capital Hill. The key is get educated on proper eating habits in order to live without chronic inflammatory disorders that 75% of medications prescribed in the US are treating due to disorders caused by unhealthy eating habits. You can't count on the FDA (FOOD AND DRUG ADMINISTRATION more like federal drug agent) to keep you safe and informed as they are just a link in the trillions of dollars earned from this rat race. 

High saturated fatty acid diet like a fast-food diet or a diet with little unsaturated fatty acid intake can lead to common health problems such as acid indigestion or in extreme cases GERD (Gastro-Esophageal Reflux Disease).  The common regimen is to take an anti-acid and inhibit acid in your stomach which works against basic digestion where acid allows you to get the nutrients from your food, leaching you from vital nutrients over time, leading to deficiencies in B-12, Vit. D, etc... which promotes disease. A really wise way to manage acid indigestion is to eat some slices of red type apples before bed and experience the miracles of no acid symptoms, keep digesting your vital nutrients as the insoluble fiber of the apple keeps your food moving out of the stomach to the intestine where indigestion is caused from food staying in the stomach which causes the food to ferment and and continue to stimulate the acid cells in your stomach to release too much acid! Anta-acid medication management leads to many disorders over time-just do a search on this and it isn't good.

As a vasodilator, nitric oxide signals the blood vessels to relax, allowing them to expand. This effect allows blood, nutrients, and oxygen to flow freely to every part of your body.  Oral bacteria contribute to nitric oxide production and influence host metabolism. The oral microbiome is highly malleable and responds rapidly to internal and external influences.  So, inhibiting the acid with an anti-acid means you are not getting proper dense fiber with a heavy meal which means you are sleeping with low levels of nitric oxide, which leads to an over working heart due to the blood vessel restriction function and poor circulation during sleep.  Low oxygen counts leads to muscle spasms, inflammation of nerves, etc..., especially if you have joint and muscle pain problems.  HIGH Saturated fatty acid in the blood stream is very inflamatious to your joints, muscles, tissues, etc... just as acid is to your eyeballs, especially if you have arthritis, allergies, fibromyalgia etc...

What's more, your nervous system is in direct communication with your intestinal bacteria, the bacteria can only be helpful if they get the proper fiber, otherwise expect irritation/inflammation signals to travel throughout the nervous system, muscles, joints, and everything related to the nerves.
